Baked Almond Cheese

Ingredients –

  • 1 cup raw almonds, soaked overnight

  • 1 Lemon, unpeeled

  • 1/2 cup water

  • 3 tablespoons olive oil

  • 1-2 cloves garlic

  • 1 tsp. each freshly ground rock salt and pepper

Blend all ingredients until creamy and thick, 3-4 minutes pausing to push mixture down the sides if needed. Transfer your mixture into a lightly greased small oven proof dish, pushing down gently to flatten out. Put in the fridge overnight once again, to allow flavours to blend and texture to soften. Bake in a moderate oven (180degrees) for about 40 minutes. Enjoy warm or cold! Lasts around 3-4 days in the fridge.
